Oliver Wendell Petrie: Erie Canal Cook In-Person

Oliver Wendell Petrie, a native of Oswego, New York, served for three years as a cook on board the Empire State oil tanker moving along the modern Barge Canal. Oliver specialized in traditional soups and stews, but he also knew a few recipes for other ethnic cuisines, such as chili con carne, Hungarian goulash, and chop suey! He served a crew of six to seven men who worked on the oil tanker.

The Oliver Wendell Petrie collection at the Erie Canal Museum consists of many documents from Oliver’s time on the canals, including his recipe book. The collection provides a unique look into the New York State Barge Canal system and the late 1930’s in general. The Erie Canal Museum is in Syracuse, New York.
