    Join Chef Raj Singh Khosa, owner of Tandoor of India in Fairport, for a Zoom demonstration on preparing traditional Punjabi dishes.

        Punjab has long been known as the Breadbasket of India, so naturally the region’s food is also celebrated for its distinctive flavor.

        Marked by the complex flavors of spices, Punjabi cuisine carries Indo, Mughal, Persian, and Afghani influences. People around the globe are familiar with the Punjabi tandoori cooking method developed from the tradition of cooking in the tandoor, or clay oven. In addition to the widely known tandoori chicken and butter chicken (chicken makhani), Punjabi cuisine also includes dishes made from lamb and fish. For the vegetarian, there are dishes made from vegetables and legumes, particularly lentils. 

      
As the region is also known for its milk production, dishes are often accented with dairy-based foods such as paneer, a Punjabi type of cottage cheese. The food is often paired with roti or naan breads and the indigenous Basmati rice. Garam masala, coriander, and cumin are popular spices used in Punjabi cuisine.
